L...Oh my goodness that baked oatmeal looks yummy. <br /><br />Like Abby said, muffins are an easy option. I got a muffin tin that makes giant muffins so that they aren't a very snackable size for me. And Ryan just grabs one out of the freezer in the morning so I don't have to get up... His fave right now are banana muffins. And other quick breads like scones, banan...Muffins! And other quick breads like scones, banana bread etc. You can make them healthier by subbing natural syrups or sugars and fats other than butter (try coconut oil in sweet baked goods, so yummy!), and maybe even nut flours for wheat flour. If the recipe makes at least a dozen muffins you're all set for a couple mornings. <br />Also, Nourishing Traditions has a recipe called Zucchini Kiku, which is basically a frittata, if you like eggs for breakfast. It will keep for an extra morning or two, just heat it up.
